Francoise Chauvenet Silver Cap

La Famille des Grands Vins Boisset is proud to revive a historical house of Burgundy founded in 1853 in Nuits-Saint-Georges. In the heart of the Burgundy region, deep in the wine kingdom, Françoise Chauvenet became an emblem, making a mark with her unique and subtle style. Her criteria are carefully followed to this day in blending the wines: character, refinement, charm and elegance. Our wish is to renew the tradition of the end of the 19th century and the beginning of the 20th century, making sparkling wines, and so completing a lifestyle from aperitif to dessert. Françoise Chauvenet's mission is to produce wines of strong personality and originality reflecting the character of the soil and the grape varieties: refinement, charm and elegance. It is an approach based on the niche of rare and high-quality wines, which does not adhere to the logic of the high-volume market. Françoise Chauvenet's sparkling wines are elaborated according to the fermentation-in vat-method: vat fermentation with a blend of sugar and yeasts, storage on lees, cold stabilization, filtering, bottling, corking and wire capping, storage and labelling.

"Crush" Proprietary Red Wine - Dry Creek Valley

"Crush" Proprietary Red Wine - Dry Creek Valley

The Crush is a pivotal point in the winemaking process when the freshly picked grapes are brought in from the fields. The fruit harvested for this bottling took place in the early pre-dawn hours while the temperature was still cool in order to preserve the fresh and vibrant aromas found in this blend of Cabernet Sauvignon and Merlot. A great full-flavored drinking wine with generous fruit and smooth tannins on the finish.

2006 Mill Creek Sauvignon Blanc - Estate

The grapes for this wine come from the Sauvignon Block on our estate property. The grapes were hand harvested when the sugar was 25.8 degrees Brix and the pH was 3.33. This delightfully bright wine shows a fresh nose of grapefruit and lime with a hint of honey. Flavors are classic Sauvignon Blanc fruit with lime and grapefruit. The finish is spicy and lively.

2004 Mill Creek Estate-Bottled Syrah

From our Dry Creek Valley Corner Pocket Vineyard, these grapes were harvested Sept. 9, 2004, at 26.4 degrees Brix. After crushing, the juice underwent a 5% "saigne" to increase concentration. The wine was fermented in temperature-controlled, stainless steel tanks and pumped over twice a day. After malolactic fermentation, the wine was racked to 60-gal. French, Hungarian, and American oak barrels and aged for 15 months. After a light filtration, total production of approximately 400 cases was bottled on May 10, 2006.

2005 Ridge Paso Robles Zinfandel

2005 Zinfandel, Paso Robles, bottled Nov 2006
100% ZINFANDEL

The 2005 growing season was delayed by cool spring weather that continued through late May, but above-average summer temperatures allowed the vineyard to catch up. The stressed vines at the top were harvested in early September; the rest ripened lock by block over the next thirty days. Rebounding rom the low yields of 2004, these eighty-year-old ines set a large crop. The thirteen separate naturalyeast fermentations took place in small tanks, two thirds of which were fitted with grids, keeping the skins submerged to augment extraction of color and tannin. In eight days, on average, the tanks were drained and the skins gently pressed; the majority of press wine, rich in both color and complexity, was blended with the free run. Natural malolactic fermentations finished in two months, and the wine was racked to american oak barrels for aging. New oak was held to twenty percent, complementing the wine's bright cherry fruit and exotic spice. This rich, full-bodied zinfandel will be at its most enjoyable over the next five to six years.

A pretty nose of graphite, lavender and cherry. The palate is sweet and bright, cherry, licorice with nice acidity. One of the best values in Pinot Noir for the price.

2004 Col Solare

2004 Col Solare

Grapes were gently crushed and pumped over twice daily during a ten-day fermentation. At dryness, a portion of the wine went through an extended maceration of about two weeks to increase extract. We moved the wine with gravity into new and one-year-old French oak barrels; each barrel was racked periodically throughout 22 months of barrel aging. Sensational chocolate and caramel aromas join with an earthy note and a hint of tobacco to introduce a wine with generous black currant and black cherry set off by a trace of allspice. Silky with both abundant, soft tannins and plenty of muscle, this is a wine of significant dimension.

2005 Ridge Geyserville

2005 Geyserville Vineyard, bottled February 2007
77% ZINFANDEL, 17% CARIGNANE, 6% PETITE SIRAH

Cool, rainy weather in early spring delayed budbreak, but clear skies by late March brought flowering and a good set by mid-May. Above-average temperatures throughout the summer moved ripening along, and we started to sample for flavor in late August. Mild fall weather with occasional fog slowed maturation while allowing color and flavor to deepen. Harvesting began in mid-September and extended over twenty days as each of the thirty-three parcels ripened fully. The separate lots fermented on their natural yeasts, and were pressed at dryness (average seven days); once natural malolactic was underway, we began assembling the finest and most characteristic. Because of the zinfandel's unusually firm structure, we included very little petite sirah. As in most years, the 120-year-old carignane was an elegant, vibrant addition. This outstanding vintage aged fourteen months in air-dried american oak. Rich primary fruit gives the wine immediate appeal; it will develop greater complexity over the next ten years.

2005 Louis Latour - Aloxe Corton Ier Cru "Les Chaillots"

Notes from the winery: This charming wine has ripe fruit aromas and its spicy nature was conferred by the 12 months it spent in oak barrels. Somewhat vanilla, and also liquorice, this complex wine is round yet mellow. A well balanced wine that should be enjoyed after three to five years of cellaring.

2005 Louis Latour - Nuits St. Georges

Notes from the winery: You will be enchanted with this powerful and round wine. It has a great bouquet of liquorice aromas along with more gamey animal aromas. Once on the palate the tannins are mellow and the flavors that come to forth are those of ripe fruits. Great harmony that promises us great enjoyment after five years of cellaring.

2005 Louis Latour - Pommard

Notes from the winery: A racy, typical Pommard loyal to its terroir, this wine seduces us with its vegetable aromas reminiscent of elderberry and walnut tree leaves. Light menthol comes to the forth with this very full, potent, ample yet refreshing wine. A tannic wine with balanced acidity. A two to three year old wait will allow for perfect evolution.

2005 Louis Latour - Corton-Charlemagne Grand Cru

2005 Louis Latour - Corton-Charlemagne Grand Cru

Notes from the winery: A masterpiece in complexity and an overall powerful wine. Notes of roasted almonds with smoky undertones, in addition one finds a slight hint of black powder, and of tartness, proof of its excellent acidity/fruit balance. We encounter buttery aromas, vanilla-like ones that are enhanced with ripe yellow flesh fruit ones; mango. A wine in full evolution, to be enjoyed for many years to come.
